The breast of lamb is the giveaway cut of the animal (in some butchers’ shops literally), yet most british cooks these days have probably never got to grips with one. If that includes you, you’re misssing out. its packed full of flavour and needs to be cooked long and slow.
Bakerie will be serving up an 8 hour slowly braised lamb breast, It will be rolled and stuffed with apples, raisens, rosemary, pinenuts, mint and garlic then wrapped in smoked pancetta and served with dauphinoise potatoes, spring greens and a rich red wine jus using Aglianico fuedi di san gregorio wine.
This is a red wine grown near mount vesuvius. Ripe red and black fruit aromas with notes of herbs and mint. Intensely fruited and flavourful without being overbearing. A lovely savoury edge.
This wine will be served with the dish and also on offer for the night by the glass and by the bottle.
