The bar is driven by seasonality, sustainability and simplicity, and will have a focus on classic cocktails, with an additional menu, reimagining classics based around four flavours each month, determined by seasonal British produce.
Located at the top of King Street, close to Hotel Gotham and Six by Nico, Blinker Bar sits in good company with aspirations to be the pre and post dinner and all day cocktail spot for those who appreciate a well crafted beverage and great service.
The man behind Blinker, Dan Berger, formerly Head of Bars at London’s The Ned and Bars Manager at The Gordon Ramsay Group, has returned to Manchester after seven years working in some of Melbourne’s most famous cocktail bars and heading up some of London’s biggest hospitality openings and operations.
The concept and name ‘Blinker’ is inspired by a forgotten classic cocktail where the recipe calls for Rye, Grapefruit and Raspberry in perfect harmony. The way these three ingredients blend together to produce such a well-balanced drink has inspired the seasonal approach to perfect serves and reflects what Berger hopes to produce in this high end yet comfortable, approachable cocktail bar.
With fruits grown in the UK and a vast selection of spirits hand picked from all over the world, the fit out of the bar will mirror the menu, using a combination of up-cycled furniture and sustainable materials, with inspiration being taken from some of the best bars across the globe.
