We owe a lot to whoever thought of mixing pasta with cheese. It’s the comfiest of comfort food and can fix just about anything.
Whether you’re partaking in Veganuary or made the switch to vegan in the last few years then I suspect, up there with bacon on the list of things you miss, cheese is at least in the top 3. And therefore, mac and cheese is a meal you wish you could eat.
Well, luckily for you, Alvarium have created a brand new menu and top of the list is Mac & Cheese. Made with pistachios to create a fabulous pistachio cheese and mixed with macaroni. And one of the best things about this is that pistachio cheese is actually a lot better for you than other vegan cheese because it’s made using one natural ingredient that’s full of all those good nutrients.
On the top is a crispy squash bonbon, to add another beautiful crunchy texture and the whole thing is topped with sweet potato sprigs that are bloody delicious.
The Mac & Cheese is a part of Alvarium’s new menu for January which also features a Hassleback Heritage Carrot served with an apple & sage mash that I urge you to get down and try.
I’ve made mash since and mixed in apple and sage as the folk down at Alvarium told me to and my god, I am never going back to bog-standard mash ever again.
There’s also a Potato Fondant with tamari glazed tenderstem broccoli, creamed turnips and pickled kohlrabi crouton.
The menu also boasts two new Sandwhiches including Shiitake Bacon and Scrambled Curried Tofu and the Butternut Squash Bhaji Sandwich served with kale chimichurri and sweet & sour peppers. It’s both sweet and spicy and packed full of flavour.
Definitely tuck into some of the chunky wedges too!
And finally, the best thing about any menu – dessert.
There’s a new Roasted Apple & Yuzu Rice Pudding served with hazelnut praline popcorn. This is perfectly sweet and will finish any meal at Alvarium fantastically.
