Ceresis, the much-loved Roman-style pizzeria in Sale Moor, has announced it is ready to re-open following the death of its co-founder.
Marco Carboni passed away in May this year aged 49, just two months after being told that his cancer was terminal.
He ran the popular pizza takeaway alongside his partner Valentina. Both Marco and Valentina were born and raised in the Italian capital, which is where Marco spent his final days before he died on 17 May.
The spot, on Northenden Road, became hugely popular for its friendly hospitality and being one of the only places in the region to make authentic Roman-style slices.
On Thursday (11 July), Valentina announced she would be re-opening the shop today (Friday 12 July) in an emotional social media post, vowing to continue making their authentic sourdough pizza ‘because that’s what Marco would’ve wanted.’
Writing on the Ceresis Instagram, she said: “I thought I’d write this post to update you all on our recent absence; not only from opening every day and pouring our hearts and souls into authentic Roman pizza but also from social media.
“Thanks you from all our heart for your warm support and material help, all your thoughts and love to us these cruel months. I am back with kids and I see you all welcoming us back with a love I couldn’t imagine, thank you each one of you for this I wish to hug you all to me, means the world to us now that our world is in pieces, but we feel blessed to be part of this wonderful community, I’ll never forget your love and you are all in our heart forever.
“It’s hard for me to write this, and I can’t begin to explain how difficult the past few months have been. On March this year Marco was diagnosed with terminal cancer and on the 17th of May, our beloved Marco passed away.
She continued: “Ceresis was Marco’s and my dream, and it’s what we loved to do. Every slice of Ceresis pizza was made with passion, soul, and happiness. We started this dream together, not knowing what the road ahead would look like for both of us.
“With Marco gone, we’re heartbroken. We’re all in pieces. Every day hurts and back to reality more, but I can’t forget the reason why we started this, and it now only feels right to continue Marco’s Legacy in the way he would’ve wanted us to.”
After Marco passed away, the couple’s close friend Sharon Coen set up a fund to help Valentina and her children following the loss, which at the time of writing exceeds £3000.
