Manchester’s chef of the year Shaun Moffat to take on Michelin Guide-listed Maya

Manchester’s chef of the year Shaun Moffat is to take to the stoves at Canal Street’s Maya, it’s been announced.

Having previously scored critical acclaim at the Edinburgh Castle in Ancoats and the Lamb of Tartary in the Northern Quarter, Moffat will be bringing his modern British style to the space later this month.

Of the new role, Shaun told Manchester’s Finest: “I’m really chuffed to be taking the helm of Maya’s kitchen and to be getting my teeth stuck into it, as it were.

“Of course, I’ll be utilising the best of local suppliers from around the surrounding areas and building on the offering that’s already been established.”

The team at Maya said: “We’re delighted that Manchester’s Chef of Year will be taking the reins at Maya.

“Shaun is renowned for bringing his masterful spin on the best of modern British dishes and to wide acclaim. His autumn and winter menu will herald a new season at Maya, which is fast becoming one of the city’s most exciting food, drink and late night destinations. 

“Shaun’s brand new ‘Modern British Bistro’ winter menu begins on 23 October, and will feature elevated bistro classics, a whole new Sunday Roast and a new weekend brunch menu. 

“The menu is action packed with an abundance of fresh and hearty winter dishes, available in both the Bistro and Dining Room. 

“We cannot wait.”

Maya

Maya opened in March this year and found itself among the few Manchester restaurants listed in the Michelin Guide just weeks after opening.

Carved out of an old industrial warehouse in the Gay Village – formerly home to the ground-breaking Mash & Air – the space forms part of the LEVEN hotel, and comprises a bistro on the ground floor, a dining room on the floor below and a bar/club space in the basement.

It was opened by the team at LEVEN and restaurateur Scottie Bhattarai, who is behind the likes of Isabel in Mayfair, and with a CV that features restaurant brands in the Soho House stable, as well as the acclaimed Petersham Nurseries.

Shaun Moffat, meanwhile, formerly of cult London restaurants like Manteca and Berber & Q, won the coveted title of Chef of the Year at the 2024 Manchester Food and Drink Awards.
