Mary-Ellen McTague to launch Pip restaurant at new Treehouse Hotel Manchester

The prolific Manchester chef heads up a seasonal, low-waste restaurant arriving in late summer 2024

One of the most respected figures in the Manchester food scene, Mary-Ellen McTague, is launching a brand new restaurant, Pip, where diners can expect to enjoy an innovative and conscientious all-day menu.

Set to launch in late summer of 2024, the concept celebrates seasonal cooking with McTague and her team looking to source ingredients locally and minimise waste. The restaurant will be the first of three dining experiences at the botanically themed Treehouse Hotel Manchester.

McTague has a prestigious culinary career, having worked with Heston Blumenthal at his Michelin-starred restaurants The Fat Duck and The Hinds Head. Manchester foodies might better know her from her much-missed Aumbry restaurant, charitable projects like Eat Well MCR and numerous creative collaborations.

Serving breakfast, lunch and dinner as well as grab-and-go offerings, diners can expect to enjoy dishes that blend the familiar and the unexpected like Carlingford oysters with fennel kimchi liquor, home-smoked mackerel with pickled beets, mustard cream and rye, Lancashire hotpot with pickled red cabbage and oyster ketchup and rhubarb fool with olive oil biscuits. Suppliers with a focus on quality and sustainability will be used, like Littlewoods Butchers, Cinderwood Market Garden, Organic North, Courtyard Dairy, and Platt Fields Market Garden.

This approach will be extended to the wine list, which will consist of environmentally conscious options from small and boutique producers.
