Australasia is to undergo a ‘huge transformation’ with a brand new chef taking to the kitchen, and a revamp inside the Spinningfields restaurant.
Chef Lucie Sainerova, previously executive head chef at Novikov International in London and Raffles International, will be reworking the menu, with a focus on ‘open-flame cooking’.
Known for its famous glass atrium sticking out of the ground in Spinningfields, at stark architectural odds to the adjacent John Rylands Library, it was first opened in 2011 by the late Tim Bacon of Living Ventures.
With its pioneering pan-Asian menu, it went on to become a staple of the high-end dining scene in the city.

“Australasia has always been a special place and I’m excited to bring a fresh perspective to its next chapter,” said Lucie.
“The new menu will celebrate the bold, vibrant flavours of the Pacific Rim, with a real focus on open-flame cooking.
“Guests can expect refined and creative plates, made for sharing and enjoy an atmosphere that’s as immersive as the food itself.
“We are preserving Australasia’s soul while giving it an entirely new body and spirit.”
As well as a new menu, the revamped restaurant will also feature live music and DJs into the night, as well as ‘innovative mixology’.
Diners will also be able to get 50% off food bills from Sunday to Friday until 31 March.
