Taking place on Tuesday 1st November, the Burmese food pop-up Rice Over Everything will take over Isca Wines for an evening of Shan food and delicious paired wine.
Shan State is the most popular state in Burma for tourism, mainly because of its own incredible cuisine. The state borders China to the North, Laos to the East and Thailand to the South, as well as five administrative divisions of Burma in the West – deriving tastes and flavours from each neighbouring country.
May, who is the brains behind Rice Over Everything has curated a five-course menu that combines her love for cooking with traditional Burmese and Shan State recipes.
On the evening, guests can expect dishes such as Nan Tone – pig’s head meat jelly with coriander and garlic, accompanied by spicy lime sauce and tofu cracker – which will be served to start.
Then May will continue her menu with Hin Htote, a dish consisting of rice flour paste and minced pork and spring onion parcels that are wrapped in banana leaves. It’s a traditional breakfast dish that’s also eaten as a hearty snack to stave off hunger.
Another popular Burmese dish, Shan Rice then follows, which is fish rice balls in tomato sauce served alongside Shan condiments. Shan Noodles also make the menu – a rice noodle salad in minced pork and tomato sauce served with chili oil, fried Shan tofu, crispy pork crackling and homemade Shan pickles.
To finish, May will create her popular Rice Over Everything chilli chocolate fudge tart, served with cream.
Throughout the supperclub, Isca Wines will curate a list of natural wines to compliment each dish. Hosted at its cosy Levenshulme store, the evening is set to be one of culinary discovery, with a warm and welcoming atmosphere for guests to sample brand-new tastes and flavours.
